Chia-nilla Custard
Yummy! For anyone who likes treats but wants to try and keep it healthy this dessert if for you! Its kinda like a healthy version of Cream Brulee.

Ingredients
- ¼ cup chia seeds
- 1 cup coconut water
- 1 cup coconut milk (from can)
- 2 eggs
- 1 Tbsp coconut oil
- ½ tsp vanilla powder
- 1 tsp cinnamon
- 1 scoop of collagen powder - optional
- Pinch of salt
- Mixed berries and almonds, to serve - example
Directions
Combine chia seeds with the coconut water and stir well, then set aside.
Pour coconut milk into a saucepan and heat to a simmer.
Add the eggs, coconut oil, vanilla, cinnamon, and salt and whisk for 2 minutes over low heat until the mixture thickens slightly/coats the back of a spoon.
Pour the egg and coconut milk mixture into the bowl with the chia and coconut water, stir well and pour it into little ramekins evenly.
Place ramekins into the fridge and allow to sit for an hour, or overnight to set.
Serve with desired toppings. (berries, fruit, nuts, coconut sugar, maple syrup)
Also optional to add your own flavorings to mixture or layer it with different layers before putting it in the fridge - get creative!
