Paleo Energy Bars

Ingredients
- 1 cup cashews
- 1 cup pecans
- ½ cup almond flour
- ½ cup nut butter (almond or cashew)
- ½ cup coconut oil
- ¼ cup honey
- 2 tsp vanilla (1 tsp each extract and vanilla bean powder)
- ½ tsp salt
- 1 cup dried fruit (bananas, apples, cranberries, goji, blueberries)
- ½ cup shredded coconut
Directions
Heat oven to 375 F
Place all the nuts on a tray and toast in the oven until just starting to turn a light brown (watch them!)
Chop nuts up or lightly pulse in the food processer
Melt coconut oil, honey, and nut butter – add vanilla and salt.
Combine nuts and oil mixture then mix in fruit, coconut and almond flour
Press into parchment-lined 8x8 inch pan and cool in fridge or freezer before cutting into bars.
Store in fridge.
